Black Bean and Goat Cheese Heaven in a Tortilla

Tonight I got home and Keighty was busy with her wedding invites, so I started thinking about dinner. All I could think of was this recipe from Geraldine at work, so I dug it up and we ran around to get some goat cheese and I set sail.

Keighty had no idea how easy it was to make homemade tortillas, so I edumicated her.
I had to call my mama first to get the exact recipe.

Tortillas:

3 c. flour
1/3 c. Veg Oil
1 t Salt
1 C warm water

Mix everything together
Let it rest (if ya want)

make into 12 balls and flatten them with a tortilla press (which I left at Andy and Em's) or put it between 2 WELL OILED pieces of wax paper and roll into flat disks

fry 'em up in a pan!





I made a half a batch, and it made 6 tortillas (perfect for me, Keighty and Raul)

Next up, the quesadillas!

mind you, I'm making quesadillas while Raul is on the couch making guacamole and Keighty is making zucchini bread (yum!). mylifeinfood-keighty.blogspot.com

I cut up some onion and sauteed it with oil for about 5 minutes. I added a can of black beans and 1/2 cup water. Cook it down till it gets thick and take it off the heat.

smash up those black beans into a lumpy paste that looks like it might be delicious on a quesadilla. I added some cayenne pepper and cumin, and some crushed red peppers for Raul.

Slather it on 3 of the tortillas

Get a sweet 2 for 1 deal on Goat cheese. Store one package of it, and crumble up the other package and put it on the black bean mixture. Keep in mind that goat cheese is a strong flavor, so don't go overboard on this.
throw these in a pan and cook on each side for a little bit till everything melts and melds together.

cut 'em up and serve them with some guacamole and cervesas!
