Pasta in a Sriracha, Walnut and Butternut Squash Alfredo Sauce

There are so many components to this pasta, but it's SO worth it... and it took me only about 40 minutes to pull together. 
 

Ingredients
1 Butternut Squash
1/2 Onion
Olive Oil
Butter
Balsamic Vinegar
Tbsp Flour
1/2 Cup Heavy Cream
1/2 Cup Milk (more to thin the sauce if needed)
1-2 Tbsp Sriracha
Handful of Shredded Mozzarella
Handful of Walnuts
2 Cups Pasta

Directions
I started by dicing a butternut squash into bite-sized chunks and roasting it for 20-25 minutes.  While that was roasting, I browned some onions with olive oil and a little butter....  When they were just about done, I splashed some balsamic in with them and put them aside. 

In that same pan, I made a little roux with the oil and butter leftovers and some flour.  To that, I added some heavy cream and milk.  (I guess I made my own half and half there), some sriracha and then a handful of shredded mozzarella, salt and pepper. 

When the butternut squash was almost done, I toasted some walnuts (not long guys...).

I melded this all together and threw it on some pasta and topped it with those onions.  It was enough for two... or dinner tonight and lunch tomorrow!
