So this week, I hunted up some local tortilla chips and got to work. I never realized how EASY it was to make salsa with a food processor... I've wasted years of my life chopping vegetables!
This is more of a pico de gallo, since the tomatoes aren't cooked, but it's more the consistency of salsa. I just prefer the taste of fresh tomatoes when I can get them!
I used two big, red tomatoes... the ones that had a few nicks on them. I quarted those, put them in the processor with some chopped green onions, TONS of cilantro, 1/2 a jalapeno (finely chopped) some salt and pepper and some garlic scapes. My favorite part of salsa is the garlic taste and big chunks of onions, so I just kept adding more and more.
I've been searching for a snack I can bring to work on my long weekend days, and this hit the spot.
The salsa is delicious, and took me about 10 minutes top to bottom with ingredients I found easily at the market. But now I have a whole box of fresh jalapenos that I have no clue what to do with... Any ideas? I'm not a super spicy type of girl.

DeleteI am the world's biggest wimp when it comes to spicy (I think mild salsa is spicy...). And, if I can stuff my face with these poppers I know you can too.

ReplyDeleteyou could easily seed them and slice them in half... then pop them in the freezer on a cookie sheet. When they are pretty much solid, transfer to a baggie, and voila... frozen jalapenos, and it's super easy to grab half a one to add to something for a little zip.
